Festive & Fudgey Brownies That Everyone Will Love
Happy December, everyone! I can’t believe how quickly this year has gone by. I just finished my very last (fall) semester at Arizona State and only have one more semester until graduation. I could not be more excited/nervous/ready.
To celebrate the end of my crazy semester and beginning of my much needed winter break, I decided to kick off our Healthiest Holiday’s Treat Guide! I’m giving a few classic holiday recipes a bit of a healthy upgrade this year by omitting all refined sugars, processed flours, and unhealthy fats. My goal is to use all natural ingredients that benefit our bodies and keep us feeling our best, even when we indulge during the holidays. I personally love the dessert table, ask anyone, I could totally eat my body weight in cookies, but I don’t love how processed and refined sugars make me feel. Beyond the bloat, I get terrible migraines and lower intestine inflammation like you wouldn’t believe!
My goal is not to take away the ‘fun’ of the holidays or pressure you into thinking you can’t enjoy the real deal every now and again. Because believe me, I love the real deal every now and again. The truth is, classic recipes are super easy to upgrade and it’s kind of like why not use better ingredients? Right?! I’ll avoid a sugar hangover and week of bloat, any day.
Let’s start December off right with these Peppermint Fudge Brownies! They are rich, minty, and full of that dark chocolate flavor that we all can’t resist this time of year. Surprise your guests this year with these peppermint filled brownies, no one will believe that these are actually better for you than the classics! Peppermint Fudge Bean Brownies
What You Will Need
- ¾ cup maple syrup
- ¼ cup coconut oil
- 1 teaspoon peppermint extract
- ½ teaspoon vanilla
- 1 egg
- 1 can black beans, puréed
- 1/3 cup whole wheat flour
- ¼ cup cocoa powder
- ¼ teaspoon salt
- Peppermint candies, optional
Preheat the oven to 350ºF and line or grease a 9×9 baking dish
In a large mixing bowl, cream together the maple syrup, coconut oil, peppermint extract, vanilla extract, and egg. Set aside. Using a food processor or blender, purée one can of black beans until completely smooth. Occasionally scrape down the sides to ensure all of the bean skin is blended up.
Carefully mix the black bean purée into the creamed maple syrup and continue to whisk together. After fully incorporated, add in flour, cocoa powder, salt and broken up peppermint candies and continue to mix together.
Pour the brownie batter into a 9×9 baking dish and bake for 30-40 minutes. If the edges begin to crisp quickly, cover with foil for the remaining time.
Let cool completely before cutting and serving. Optional: add a few more broken peppermint candies to the top of your freshly baked brownies as soon as they come out of the oven!
