It’s like a healthy dream come true

This is a late post and a short recipe because holy school. Since starting my last eighteen-hour semester a little over three weeks ago, I have been up to my ears in everything from nutrition case studies to analyzing and interpreting media laws. I know, it sounds so fun.

Because I’ve had so much on my plate lately, both literally and figuratively, I’ve kind of put my favorite sweet treat recipes to the side and have just been focusing on making and preparing my meals for the week. I usually work anywhere from 36-40 hours a week  so planning has become crucial for me. I was thinking about doing an updated what I eat in a day post, just for the sake of showing you how I’m managing school, work, working out, and eating healthy throughout the week. I have such a love/hate relationship with doing those posts simply because I don’t want anything to think just because I eat a certain way, means you have to eat a certain way. But I also think I am a pretty realistic and balanced health-person soo if I should be concerned about anything, it’s that my meals are boring as heck and I tend to eat the same things everyday.

I think I’ll do it, but let me know in the comments if it’s something you’re interested in seeing. I’m a weirdo and I love getting a look into other peoples daily lives and routines, like vlogs – I love vlogs. Or I might just do a fun little update/chit chat with some insight on my training and eating. Which would ya like to see?

I said this was going to be a short post and here I am rambling. I just love writing to you guys, it’s so soothing. Well, these fudge bites also happen to be soothing, because they’re made out of avocados, and nothing is more soothing than the perfect avocado. They’re completely refined sugar free, only containing honey for sweetness, and are everything you could ever want in fudge. They are creamy, rich, and oh so flavorful. Each bite is decadent, sweet and the perfect amount of cocoa. Dark chocolate fudge happens to be my weakness, but at least now I don’t have to feel guilty when I finish every last bite!

Along with their incredible texture and flavor, these fudge bombs are so great for you. Healthy fats from the avocados, pistachios, nut butter and even raw cacao are extremely beneficial for brain and cognitive function, your heart and keeping LDL’s low, and even hormone and thyroid function. As a student, all of these elements are crucial for maintaining a healthy body throughout the semester. Omega-3’s are even super beneficial for maintaining healthy stress levels!

All Natural, Dark Chocolate Avocado Fudge


What You Will Need

  • 2 avocados, ripe
  • 1/2 cup nut butter
  • 1/4 cup cacao powder *cacao is slightly different than cocoa powder in that it is processed at a much cooler temperature, making it richer in antioxidants and nutrients
  • 1/4 cup honey

Optional: crushed nut toppings such as pistachios, pecans, almonds, cashews

In a large mixing bowl, thoroughly mash 2 ripe avocados until creamy. (Some lumps are okay, but if you’re a texture/visual person, sometimes green things in your fudge can look a bit offsetting!) Add in 1/2 cup of nut butter, 1/4 cup of cacao or cocoa powder, and 1/4 cup of honey. Mix well until all of the ingredients are evenly combined.

Pour mixture into a parchment lined baking dish or loaf pan. Let chill in the freezer for 4-6 hours, or overnight. To cut: run a sharp knife under hot water for 20-30 seconds and slice into even squares. Store in the fridge or freezer until serving! Enjoy!
