Because It Is The Most Important Meal

And what I go to bed dreaming about

I would be lying if I said I don’t go to bed every night, looking forward to tomorrow’s breakfast. And the crazy thing is – I eat the same thing every single day. Okay – kind of

You know what they say, breakfast is the most important meal of the day – and I am totally a believer. What you eat in the morning, or the first meal of the day, can play a major role on the rest of your daily choices. If you find yourself reaching for your french vanilla coffee creamer or Little Debbie’s mini muffins first thing in the morning, you’re more than likely to crave sugary foods for the rest of the day. Yikes!

Breakfast looks different for everyone. Maybe you have an 8 a.m. class, maybe you have an 8 a.m. nagging boss – whatever it may be, you need to have some sort of breakfast. I never ever leave my house without eating something, even if it’s only a banana and a protein shake. I get it, when you’re just waking up and trying to get out of the door, the last thing you want to think about is breakfast. But just as making the sweet decision in the morning can effect your whole day, so can the skipping decision.

I made it a priority to always have a wholesome breakfast to start my day, even if that means waking up a half an hour earlier. There is no better feeling than knowing you’ve already made healthy decisions before 10 a.m. – it’s truly encouraging for the rest of your day. Not only will you feel proud of yourself, you will actually have energy to get through the rest of your day, crush a workout, and everything in between! So yes, I do eat the same thing every single day and I do believe it is why I have lost the weight I have, continue to get stronger in the gym, and feel like I can take on anything throughout my day.

And what is it that I eat every day?


I have two eggs with fruit every single morning

With 70 calories per egg, 6 grams of protein, and 5 grams of healthy fat – eggs are among the most nutritious foods in the world and are incredibly cheap to purchase. Chad and I go through roughly 36 eggs per week and spend roughly $2.43 {about 0.06 cents per egg}.

I love making up different recipes with them, that way, they never get old! Here are a few of my favorites:

The Breakfast Sandwich

This is definitely my favorite post-workout breakfast choice: Whole wheat English Muffin, 2 eggs, 3 pieces of turkey, and one slice of cheese {340 calories, 30 grams of protein, 3 grams of fiber} I also always have a piece of fruit like a banana, apple, oranges, or even a taste of all three!

I also love the breakfast flatbreads or thins if you’re looking for something a bit lighter*


Can’t I have two favorites?! I love egg bowls and could eat them for breakfast, lunch, and dinner. But really, they are so easy to make, you can add anything you want, and they always turn out so flavorful. For anyone who isn’t a huge can of eggs – I would definitely give these a try! By far the easiest way to eat eggs, without realizing you’re eating eggs.

My go to egg bowl is a veggie bowl. I sauté a half of an onion, one bell pepper (green or red), and a handful of garlic cloves. I let that all cook down with a little bit of salt and then I add in two scrambled eggs. Let it cook to perfection, omelette it up if you’d like and voila! An egg bowl!

I paired it with homemade healthy hash {plain, cooked red skin potatoes} and half of an avocado*{about 320-450 calories, depending on the potatoes}

Two things that I’ve come to learn while losing weight in college, 1. You need to find the healthiest options for the least amount of money possible and 2. You’re going to eat generally the same things every day. Like I said before, we get 36 eggs for less than $3 a week, and they are full of protein, healthy fats, and vitamins.

Be sure to eat breakfast every day, whether or not you decide to give these recipes a go! Start your day with one healthy choice and you will be shocked to see how easy it is throughout the rest of your day.

  1. omg yes hahaha breakfast is a necessity for me and my favorite part of the day!! and I can totally eat eggs every day and not get sick of them. That, and cereal. I think I could eat cereal 3x a time and be ok with it 😛
